Is the Chef’s Choice M130 an upgrade on their 120 and 220 models?
Like many of the other Chef’s Choice knife sharpeners that we’ve reviewed here on bestknifesharpeneronline.com, the M130 features three stages:Stage One grinds your knife with coarse diamond sharpening wheels. The deal here is the same as most other electric knife sharpeners: This stage should only be used on very dull knife edges to help bring them back to their cutting prime.Stage Two is to finely grind. If you are just ‘touching up’ your knives for general maintenance, then you would start here and skip stage one altogether.Stage Three is for final honing to help give you that all-important sharp edge.
Each of these abrasive stages is increasingly fine, but for the majority of the time you’ll only really be concerned with the latter two stages. These are for when your knife starts to dull and is in need of a bit of a touch up, in stark contrast to the first stage which, as mentioned, should only really be used for serious work.
Each stage is set at a slightly steeper angle than the one preceding it, with the first stage being a tough grind set at an acute angle and the last being a soft hone set more obtusely. Lovely touch and definitely helps make the M130 that little bit more idiot proof!
nice little bonus feature for the M130 is its cleaning system. A magnet located on the underside of the sharpener collects all of your knife filings as come off your knife. Then, perhaps every few weeks, all you need to do is wipe these away with a cloth. Easy.

Like so many other Chef’s Choice electric knife sharpeners, with the M130 knives are sharpened easily and incredibly quickly. Its value for money really comes through with the fact that this sharpener has the ability to produce different edges, depending on how you use the three different stages on offer on the Chef’s Choice M130.
Combing stages one and two creates what Chef’s Choice call the ultimate fine edge, and creates edges that are perfect for precise cutting. However, the real sharpening ability of this electric knife sharpener is best seen in its non-powered second stage. More acute and coarser, this stage will cut more aggressively to work a good alignment and straight edge. You’ll have to be careful not to exert too much pressure as you apply the knife, but this stage in particular does a great job on most knives.
The third and final stage does a very fine strop and polish to take away and slight roughness from the preceding stages. A lot of people might only want to use a stage like this, and the M130 does a fine job of taking away those little nicks.The Chef’s Choice M130 elastomeric angle guides work a charm and help provide an excellent angle for you to sharpen at. Chef’s Choice are masters at this, and their knowledge and experience on optimum knife angles really shines through here.
The M130 does not have anything as coarse as stage 1 on either the Chef’s Choise 110 or 120, but for some this may be a good thing as too coarse a sharpen could ruin your knives. However, this stage does still pack plenty of bite, and knife edges produced by this stage can work great on more fibrous foods like chicken and fish.
Any cons? Well, this sharpener is sometimes prone to leaving (albeit minor) scratch marks on knives. For many, this isn’t a problem, but might put off those of you who are more precious about your equipment. It is also unsuitable for Santoku knives, but this is true for so many electric knife sharpeners.
The M130 continues the Chef’s Choice tradition of creating high-performance versatile, efficient and easy-to-use electric knife sharpeners. The price might be a little bit steep for some, but the price is very much justifiable, leaving the M130 up there with the best.
